A Warming Breakfast Hash Curry Recipe For The Cold Months

Over the years, I have tried so many various breakfast options for what I thought would benefit my diet. Cold cereals, warm cereals, muffin & tea, handful of nuts or power bars,
eggs & coffee, avocado toast(although this is still a fav of mine). One day I just said "you know what, I'll just throw in the skillet, all the things that bring my body alive, make me feel nourished, honor my love of Ayurvedic spices & tastes great.

mfort food dish that made me excited to eat in the morning and leaves me feeling nourished on a cold day. Enjoy!
Erica's Vegetarian Breakfast Hash
Ingredients
1/2 cup extra firm Tofu
1/2 cup frozen kale
1/2 cup frozen spinach
1/2 cup chopped Portabella mushrooms
1 Morningstar Hot & Spicy Veggie breakfast patty
1 cup sweet potatoes(regular potatoes work as well)
1/2 cup frozen or fresh blend of yellow, orange & red bell peppers & onions
1/2 Avocado or Tomato slice
1 tablespoon Ghee or coconut oil
1 tsp sesame oil
1 tablespoon Goats milk cheese or 1/2 cup paneer cheese(optional)
1 tablespoon tahini dressing, or my favorite Annie's Goddess Dressing
1 Tsp ground turmeric
1 tsp curry powder
1 tsp cumin powder
Salt to taste(I use sea or Himalayan pink salt)

Cooking
1. Heat your oil of choice in a pan, add potatoes, tofu & crumbled veggie patty.
2. Add vegetables & spices & cook until all ingredients are softend
3. Spoon into your favorite bowl, add avocado slices, tahini dressing & sprinkle with goats cheese.
