Collard Green & Tahini Soup

A Traditional African American soup to cleanse, nourish & comfort

African Americans are a beautiful mix of various ethnicities. This soup recipe honors that with ingredients from numerous cultures, along with the goat of soul-food...Collard Greens!
Collard greens are rich in calcium & vitamin k, anti-cancer properties, lowers cholesterol and may help with weight loss. Here is my quick recipe:
1/2 cup of cooked collard greens
2 tblspoons tahini(or annies goddess dressing works great!)
1 tsp soy sauce(I prefer Braggs Liquid Aminos)
1 tblspoon of Ghee
1 cup vegetable broth
Simmer all ingredients in soup pan for 15 mins
Remove from heat
add 2 tblspoons pico de gallo
1/2 fresh squeeze lemon juice
serve and enjoy! :-)
