The Quickest Soup Ever

The other day I was short on time as lunch time neared. I wanted some healthy, warm, but quick. Lo and behold I found Miso broth and tilapia fillets. I added both to a pot and allowed the fish to cook in the broth. A short wait after, I had a simple and delicious lunch ready! Miso Broth Benefits: Gut healing (from probiotics) Bone strengthening (increased vitamin K production in body and potassium) Muscle strengthening (from amino acids) Free radical fighting (from antioxidants) Can help with weight loss (from fucoxanthin) Prevents cancer cells (ferulic, coumaric, syringic, and kojic acid) Although I kept this soup very simple. It can easily be customized. For protein you can use tofu, fish, eggs, clams, etc. Be sure to add as much seasonal vegetables as you like. Try daikon and potatoes. You can top it off with green onions, seaweed, or bonito flakes. I am looking forward to making my own miso broth next time and will start with this base:


2 teaspoons of dashi granules

4 cups of water

3 tablespoons of miso paste (yellow, white, or red) 1 package (8 ounce) silken tofu,

diced 2 green onions,

sliced In a saucepan combine dashi granules and water, bring to boil.

Reduce to medium heat and whisk in miso paste. Stir in tofu.

Add green onions. Simmer for 2-3 minutes. 4 servings.


Try to purchase local and organic items when possible, and have fun customizing your miso soup!
